SC worked much better with the Analogue stick than the Control Pad IMO. And since I reckon the GC controller has the best Analogue stick of the three controllers (not to mention you can actually use the DS2 on the GC, hence you have a choice of two controllers), the GC version should be the best controll wise. There are four face buttons, just like the DC controller, and I'm pretty familiar with the layout, and comfortable with it...
Link looks pretty cool, and I can;t wait to see his alternate outfit, maybe it's oni link costume?
All in all, I'd definately pick the GC version over the others.
Oh yeh, DsH, I also heard that guy in Tekken will be the exclusive character in the PS2 version.
