The new Medal of Honor game is supposed to have the first GREAT FPS controls for the Wii, and it has 32 player online play, along with features like Map Vote, Kick Player (with vote), behind the shoulder view of other teammates when you're waiting to spawn, the kind of things that make it feel like a real online FPS game rather than just a tacked on thing.
Otherwise, Wii Sports is one of the best multiplayer games created, ever. Will go down in history as a classic, despite its shortcomings. I haven't played any other multiplayer games.
