Well, in Jurassic Park you can really see that they cut off the top and bottom when the Mr. DNA presentation runs. Near the end, they show a drawn dinosaur, but you can't see its head. It looks really stupid and I can assure you that you cán see the head on the VHS version.
The same with the scene where the helicopter lands. Now you can't see the spoof where the chopper is suddenly parked a few meters away from where it was parked in the previous shot.
I don't think Jurassic Park has extra material on the sides, like that picture you showed. JP was shot in 1993, I'm not sure if they knew about widescreen TVs back then....
