Medal of Honour Front Line has some great tunes... Especially the main one... I thought somebody was playing a really high pitched flute, but it was a guy singing! AHHHHHHHHHHHH.

Tony Hawks....

Grand Tourismo 3

and Stuntman should have some good music in it as well.
