It sort of makes sense. While filming the Lord of the Rings trilogy I'm sure he had very limited access to food and probably went to the easiest and fastest thing to find: fast food. He was probably also under extreme stress. Now that he has more leisure time he is able to eat healthy food and exercise.

Not to mention the fact that he is a lot more popular after those movies now. Also he might have been embarrassed after looking like that and having to go to all those award shows.

He does look different. But I prefer the fat look. He had a style about him. Skinny (at least in that pic), he looks like a nut job.
But not all director's need that rugged look to pull it off.
