They can actually become any color they want. They have about 5x more cells than us humans, and a much bigger brains. So they can use their cells to expand and contract to take different colors. Theoretical of course. There has never been documented footage of it taking form of a rock or sand. Mostly just coral like the footage you have just seen. Trust me, my major is biology 8)
