I thought blitzball was great. I only made it to luca in that game, but when I was there I spent every dime on recruiting players. I loved that minigame.
My vote went to Tactics. I cant believe I'm the only one to choose it. Tactics is so good. Its the only one I've actually beat, but I have played a lot of VII and VIII, and some of X. It had a brilliant story that kept you on the edge of your seat. After each story battle, something would happen that I had no idea was going to. And with all the jobs, and the great tactical battle system, God, whats not to like? It was so much fun. Not to mention you could earn Cloud to play as, and you could even earn the legendary Beowolf!!!!
Too cool for mere words to do this game justice.
