Leia wasn't originally Luke's sister, Vader wasn't originally Luke's dad, the Ewoks were originally Wookies. There are probably more both those are the only ones I can thik off the top of my head...
I'm sure that the prequels were also changed considerably from the original idea as well. While the basic story is the same, the Star Wars movies are very different from the original one movie idea.
