There's only one trick... When you get your airship, fly to a destination in the desert and you'll find Tidu's weapon that has
Double AP. After that, Tidus' AP will fly, seriously, you'll be leveling up really fast.
After beating certain monsters at the Monster Arena, you'll get Triple AP weapons for all your characters. Triple AP means after every battle with a strong enemy, regardless of how much of the sphere grid you have filled up, you'll at least get 2 levels after each battle. That's the only "trick" to it. I don't know anything about Gameshark though, but this works very well. You have to be pretty far into the game though.
My characters are all done with everything in the sphere grid with maxed stats, and still, after each battle with a Behemoth, I get 2 level ups with Triple AP equiped.
