Though Thing has more brute strength, Wolverine has the ability to heal himself, is faster, more agile plus he has the adamantium claws

The Incredible Hulk Vs. the Thing... Well, this question was answered in one of the Fantastic Four episodes, where The Hulk absolutely crushed Thing... Hulk would win no problem, he's stronger, can jumper higher and further, and has that weird clap attack thing
