Man, I dont know how you went from not liking FFVIII to liking it more than FFVII. Wierdness.
But, here is my top 10 list of games I had the most fun playing:

3. Pokemon Red (God I loved this game when I was a kid.)
4. Mario 64
5. Super Mario Bros. 3
6. Dragon Warrior III
7. Harvest Moon 64
8. Kingdom Hearts
9. Starfox 64
10. Eternal Darkness (My opinion is that this is the best GCN game so far. So much freaking fun to play.)
