DsH: The GCN version has a bit better graphics and it has Prince of Persia (the original) as a bonus (not sure if you have to hook up your AGB).
The PS2 version has better sound, or so I've heard.

The XB version has even better graphics and Prince of Persia 2.

Too much games to buy!
