Sigh... cheddar? Bleuch.

The only true cheeses to be consmed on their own are lancashire, cheshire and wendslydale - nice white crumbly cheeses. Also great in salads, as are feta and halloumi.

I've had some smoked dutch cheese before, and that was delcicous.

Good mozarella is also excellent - the "hard" stuff, not that rubbery crap they put on pizza.

And to everyone out there who eats cheese on toast: if you're not using Worcester Sauce (Lea and Perrins, natch), you're not eating cheese on toast.

Chedder, but it has to have been aged for at least nine months.

Havnt really got to taste around the wide world of cheeses yet. Oh well, chedder is good enough.
