Well I have to ask, because I don't know who or who doesn't watch anime on this forum. So I'll ask the question.

Neon Genesis Evangelion. One word: mindf*ck. Enough said.
Used to watch a crapload of anime. Sadly I can't stand watching them anymore. Nowadays everything seems the same to me.
Off the top of my head the ones I watched complete sorta:
Watched Naruto before the craze began. Can't stand it anymore (or maybe it's just the fans I hate). I do still read the manga though.
Cowboy Bebop. Very very good. Have the same kind of dog as Ein. The soundtrack is amazing.
Trigun. Good stuff.
RahXephon. Decent evangelion "clone."
Earth Girl Arjuna. Like a Japanese Captain Planet type of deal.
Love Hina. Sadly this is what got me into anime.
Hand Maid May. Little sexy robot.
Chobits. Larger sexy robot.
GTO (Great Teacher Onizuka). Great series.
Kare Kano. Perfect people piss me off but I still liked. Nice little love story.
Angelic Layer. Sure it's girly with the angel doll fighting...but the fights are really cool...even if they're only 12" inch wooden dolls...oh shut up.
S.cry.ed. Good stuff.
.hack//SIGN. Loved this series. Great to watch right before bed. Began searching for a MMORPG like it to play. Never found one that lived up to the greatness of the anime.
Hellsing. Vampires = Good times. Some girl from high school wanted me to go with her to a convention dressed as the characters. No way no how will I ever go to the evilness of which anime conventions are. Those people scare the bejesus outta me.
FLCL. This anime is a god.
Full Metal Alchemist. Started to piss me off. Never finished it. Liked the sick and twisted parts of it though.
Digimon. Only anime I watched translated to English. Man I loved this stuff. Season 02 owns me.
Probably more but can't remember.

Trigun is my number one favorite, with Cowboy Bebop in a close second.
I also enjoy Gundam Wing. "Endless Waltz" was bad ass. I've downloaded and watched the first two episodes of NGE...it was awesome. I'm also interested in watching Hellsing.
I've also seen the Vampire Hunter D: Bloodlust movie. That was some awesome stuff.
And that movie "Spirited Away"...one of the greatest animated movies I've seen.

+Rep on the Spirited Away movie, it was more than magical for me. That was the first anime I enjoyed that didn't have samurai's, robots, and vampires.
Oh, Sailor Moon and Pokemon count as anime?

I found out there are 26 episodes for Samurai 7...... must go on a never ending search for them.

I doubt I will ever like Anime. I watched Pokemon for a while but then I got bored with it. Then, the success of Pokemon killed Animaniacs (My favorite cartoon) and brought over a ton of weak immitators (Yu-gi-oh, MegaMan, Digimon, etc.) which have completely ruined afternoon cartoons on WB. Can't stand Anime anymore.

Anime has ruined Saturday morning cartoons. I feel bad for the kids of today.
As for Pokémon. The first two, maybe three eps were decent. Went downhill from there.
Movie-wise I would say my favorite is Tonari no Totoro by Miyazaki. Spirited Away was ok I guess. Mononoke Hime was better.

I used to be crazy about Gundam Wing, now not so much. I argee with you Vampyr, Endless waltz was so kickass.

I used to watch Escaflowne, that was a cool show. The original Dragon Ball was probably the first anime I ever watched and enjoyed. I liked DBZ for quite some time. Seen a bit of Evangelion, which was quite cool. Only watched a little of Gundam Wing, and for some reason I never really cared for it.
I'm mainly too lazy to watch any huge anime series anymore. Unless I get them on DVD, I just sort of end up not watching them...
Movies like Akira, Princess Mononoke, and Spirited Away are all quite badass. I prefer anime in that form so I don't have to watch a crap ton of episodes to get the whole story.

Neon Genesis Evangelion. Loved it. Characters and storyline were superb. :] It's probably my favorite.
Hellsing. Alucard is just plain cool.
Azu Manga Daioh- Funniest. Manga. Ever. Anime sucks though.
FLCL was fun.
Kare Kano manga was funny. :]
Battle Royale manga is cool coz it's different from the movie.
I really like Inuyasha, the anime, but it's too many episodes and I never have time to see THAT many episodes X_x I like the fantasy storyline though :]
I was once very obsessed with Love Hina. I think that was my real first entry into Japanese popculture (besides video games and pokemon). I read all the manga and saw all the anime and movies :P
Negima is also a new manga from the guy who did Love Hina. It's great.
Cowboy Bebop- Obviously a classic. Loved the music too
I liked Rebirth Manga. I enjoy Ghost in the Shell: Stand Alone Complex.. Also the movie. I loved Spirited Away. I liked the Naruto manga, and i wanna see the anime but I don't have any episodes. :[
Chobits.. it was entertaining, but the ending sucked. I like the Samurai Deeper Kyo manga too.
There's probably more crap I've read or seen over the years and I just can't remember.

I really like the Gundam series. I've liked all the ones I've seen anyway... Although G Gundam was kind of iffy.
Miyazaki's movies are fun. Nausicaa is my favorite followed by Princess Mononoke then Spirited Away then Castle in the Sky then Porco Rosso then Kiki's Delivery Service...
ANd those are all of his I've seen...
Grave of the Fireflies is awesome. Recommend to even those who dislike anime.
Akira was good...
I liked what I saw of Rurouni Kenshin...
I liked the whole Dragonball thing up until Goku kills Frieza and becomes a Super Saya-jin. Toriyama should have stopped there like he planned....
Evangelion's good, although I still need to finish it...
Excel Saga's fun...
I enjoyed Tenchi Muyo and Tenchi Universe....
Cowboy Bebop brings warm feelings to my heart...
And, of course, the almight .hack//SIGN, the birthplace of the name Ginkasa (Ginkan + Tsukasa).

actually, mainstream animes have ruined saturday morning cartoons... i don't understand why the artsy, pretty animes don't catch on here... i guess the standard american wants ACTION not aesthetics.

I want comedy, irrelavance, stupid gags, and lightheartedness. There isn't really anything that fits that catagory anymore unless you consider Family Guy or the Simpsons, but those aren't on Saturday mornings and aren't the same as good 'ol Looney Toons or Animaniacs.

Grave of the Fireflies was just too damn sad. good movie though.
Pokemon... Not a big anime fan though...

The only one I ever made an effort to watch was DBZ, and Pokemon if that counts. I used to be really obsessed with DBZ many years ago. I never really got around to watching other anime but I did manage to watch a couple episodes of Gundam Wing and Escaflowne and they both seemed pretty cool.
